Baron Sazerac

Honour the roots of Haitian and New Orleans Voodoo by swapping brandy for Caribbean rum in the classic NOLA cocktail, the Sazerac (the drink Felix tries to get Bond to try in Live and Let Die).

Swirl a glass with absinthe (or Pernod) - just enough to form a very thin layer. Put glass in the freezer.

In a cocktail shaker, combine 40ml bourbon and 40ml Caribbean rum with a dash of each of Peychaud's and Angostura bitters. A Sazerac usually contains sugar too but the rum is sweet enough to compensate. Stir all of this with large ice until the outside of the cocktail shaker freezes.

Strain into the glass with the absinthe. Garnish with an extra long lime twist 🐍.
